This simple blini recipe is given the royal treatment with a delicious range of topping ideas.

Ingredients
- 500g potatoes peeled and diced
- 1 onion
- 30g rice flour
- 1⁄2 tsp salt
- 1⁄2 tsp black pepper
- Vegetable oil for frying
For the hot topping
- Warm maple syrup
For the cold toppings
Option 1
- 50g cream cheese
- 70g smoked salmon
- 1⁄2 lemon zest and juice
Option 2
- 50g vegan cheese substitute
- 1-2 baby beetroot diced
Option 3
- 1 avocado mashed
- 1-2 tbsps of crispy bacon bits or vegan alternative

Method
1. Using an electric blender add the onions, potatoes and seasoning in batches and blitz batter. Add the rice flour and blitz again to a smooth creamy batter.
2. Heat up just enough oil to cover the bottom of your frying pan for 2-3 minutes until a drop of batter sizzles in it. Now add single teaspoonfuls of the mixture and cook for 1-2 minutes on each side until crisp and golden. You can cook 4-5 blini’s at a time, depending on the size of the pan. Keep the power on medium so that they do not overbrown.
3. Drain on kitchen paper. To serve hot, stack up and drizzle with warm maple syrup delicious for breakfast.
4. Serve cold as a canapé, blend cream cheese with lemon and pipe a rosette on top then add a generous curl of smoked salmon. Or top with vegan cheese and a sprinkle of finely chopped beetroot or top with mashed avocado and a sprinkle of crispy bacon or vegan bacon substitute. Crisply cook bacon and blitz to achieve desired texture.
